Kig ha Farz... the art of being hated...
If you want to be hated for sure, if you want to be driven back to the borders of the department with sharp hooves, just say that Kig ha Farz is a kind of stew! Oh, my God! Oh, my God!
So, Kig ha Farz, what is it?
The kig ha farz or kig-ha-farz is a regional speciality born in Leon, a region located west of Morlaix and north of Brest, in Lower Britain (in this respect, it is very interesting to visit the Leon Museum, a real gateway to the land of the Abers-Côte des Légendes). The name of this typical dish, in Breton, means "meat and farz", farz coming from Latin and meaning flour.
Indeed, a dough based on buckwheat flour is used. It is cooked in a kind of bag made of knotted cloths that will simmer in beef broth and salted pork shank. Once cooked, it will be rolled, or crumbled, which gives it the appearance of a semolina.
Since carrots and cabbage are often added, this increases the resemblance (but very, very far away!) to stew.
The best Kig ha Farz in Brittany, they say....
You can taste it, in the region, in different places. But how to indicate one place rather than another? We relied on the rumour, and in particular the one spread by guides and tour operators, with the support of consumers' opinions!
We will therefore indicate the "Youdig", a rather unusual place by the diversity of its activities, since it is at the same time a question of renting truly typical cottages, a museum, traditional evenings spent listening to a true storyteller of legends by the fireplace, and, of course, a Breton inn.
"The Youdig", in the Arrée Mountains, indeed, it's all that!
And his Kig ha Farz is indicated as the best in Brittany... so....
