She fell into sugar...
The Count of Plessis-Praslin, Duke of Choiseul, Marshal and Peer of France organized a reconciliation dinner between the Jurats of Bordeaux. Today, we would organize a videoconference, but it would be less fun!
Anyway, for this type of character, you get busy in the kitchens... and, in the heat of the moment, a small incident can happen, like, for example, a fine that mistakenly falls into sugar with which you are preparing caramel.
This does not escape the vigilance of the mouth officer, Clément Jaluzot, who is inspired by it, and who, having become a fine coated with vanilla caramelized sugar, serves them for dessert at this famous dinner party. And this dinner will go down in history not for what was discussed, negotiated and decided, which everyone has forgotten, but as the dinner during which the first Montargis pralines were served! It was in 1636.
And the Count, claiming authorship of this invention, used this appreciated gentleness to win the hearts of the ladies of the Court, make useful friendships, and advance in politics!
The revenge of Clément Jaluzot
We can assume that he was not very happy to have his recipe "stolen" in this way. So he decided to fly on his own wings, and opened "la Maison de la Praline", in Montargis (you will note in passing that the word praline has no "s" after the "a", except in Montargis, where we wanted to keep it... because of the Count, of course).
And he applies, of course, the original recipe, kept secret until today.
In 1903, Léon Mazet, a confectioner, bought the House... and the recipe! Today, it is the only one to manufacture Montargis pralines according to the original recipe, and they are very much appreciated since they are now available in nearly 2000 points of sale in France, and, as a blue, white and red jewel, they are exported to some forty countries!
It has also become a "Living Heritage Company".
A beautiful story, as unusual as one could wish for, and of which you can sketch the distant consequences if you pass by the very beautiful shop in Montargis! You can also treat yourself from afar, since the website offers distance selling, which would have surprised Clément Jaluzot!
