But what is less so is that they are grown in 120 kilometres of galleries, spread over seven floors, all at 12°, as it should be, to obtain the best possible flavours.
It is the only mushroom farm in the world to cultivate its mushrooms in this way, entirely, 50 metres underground!
This policy makes it specialized in high-end mushrooms, and sells, among other things, in French starred gourmet restaurants... but also in New York, Geneva, London, etc !
It produces about 100 tonnes per year, including, for example, 40% of the world's production of "Blue Feet".
A 19th century village
The tufa in which these cellars were dug was used to build Chenonceaux, Cheverny, Chambord, and many others... This stone offers a precious characteristic: it hardens and whitens over time, in the air.
Today, this quarry revives the mysterious life of the stonemasons who worked underground in this way. And it is a real 19th century village that has been restored, a testimony, with nearly 1500 m² of frescos directly carved in the mass!
Now we're far beyond the unusual: it's bewitching!
