The Nancay shortbread: another mistake!
Everyone knows that mistakes and unforeseen events sometimes produce very happy results in the kitchen. So it is, it seems, with the famous "tarte tatin", put in the oven on a day of great pressure, having forgotten to put the pastry underneath... so it is, according to another story, with the famous "Veau Marengo", which was very probably a chicken, created on the battlefield by Dunant, Napoleon's cook, who was unfortunate enough to be separated from his supply vans!
And the same is true of the famous Nancay shortbread. The baker's son, a young apprentice, "messes up" on the making of a dough, and starts over. The next day, not to spoil it, he reworked the dough that his father had refused, in the form of small cakes that he made the customers of the store taste... who found it delicious... who asked for more... and that was it! It was in 1953.
The Nancay shortbread, today
Today, with modern means and a new workshop, the modest premises of the family bakery are no longer sufficient. More than 50,000 small shortbreads are made every day, still in the traditional way, according to the original recipe.
This little shortbread is very clever, because, at the same time crunchy, crumbly, and melting, it has in mouth a serious taste of "return" and... one returns there!
So, after tasting it, you will not leave the factory store empty-handed!
